Super Summer Spinach Salad

INGREDIENTS

  • Fresh watermelon
  • Baby Spinach
  • Canned or left-over beef

PREPARATION

  1. Cube the middle section of a seedless watermelon in even rows 1/2″ square without jumbling them.
  2. Vacuum pack the watermelon and set aside in the refrigerator
  3. Wash and dry whole leaf baby spinach
  4. Chop into crumbles the roast beef from a can of roast beef or just a tender beef that is brought to room temperature
  5. Toss the beef and spinach together with a light Sesame Ginger salad dressing
  6. sprinkle the watermelon cubes around the bowl with the other ingredients
  7. Dust with black pepper
